    Surely you just change the account details into your name and get everything sent to you, or change everything to paperless and you get emails or log in wherever you want.
  • I perhaps need to look in to improving her wifi coverage!!
    Photo uploads to google don't use that much data. Get her a mobile data plan, its not expensive

  • The Office Lens app could be useful. When you take a picture of a document, the app straightens it, removes any background around the edges so it is readable and it will upload a PDF to Onedrive.

    You don't even need office lens, document scaning is built into most cloud storage apps, onedrive, google drive and dropbox will scan documents directly.

    Mum may not wish to have all the accounts taken out of her name or changed to paperless, particularly if she would then struggle to access them herself. Lots of people still prefer paper copies of things.

    Are you sure you are not over exaggerating the situation? Does your Mum really get documents in the post that can't wait a couple of days? Can't imagine a company or situation that sends stuff in the post and can't wait a week or two for a reply.
    If google sync is taking that long I recon she is powering off the ipad within 10 minutes of taking the photo or there is a bug.
    I recommend clearing the ipads cache and other excess data and running a security check on it.

    I have WhatsApp set up to automatically save photos sent that way to my photos.  Also store my iphone & iPad photos to icloud, and share them via icloud to my ipad, and hubbies iphone & ipad.  5gb is free and £0.79 a month for 50gb is a no brainer.
