Mortgage issues

So I live in Scotland and I have put an offer in on a house at the end of June my mortgage offer came through at the end of July and the date of moving was the 11rh of Sep but the week we were due to move the solicitor emailed to say they haven't received the loan papers to complete the sale, my broker was confident they would be in by the Friday but it never happened, they were hopeful that they would receive them this week but still nothing, on Monday I got an email. From my broker asking for July and August Bank statements and a brief description on how covid has or could effect my buisness (I'm a self employed hairdresser have been for the last 7 years) so my question is why are they asking for all this now when we were due to move out last week why could they not have done all this at the very beginning, when ever we get in touch with the lenders they keep telling us that everything is there, there just waiting to process it, I don't know what to do now I'm really worried that they will refuse the loan now, especially now with covid slowly coming back, just looking for any advice on what I could do, is this something that happens alot just feel we have been treated really unfairly with very little communication.
