Payment schedule for bathroom refit

Discussing costs with a plumber for refitting bathroom, though he hasn't yet suggested how/when he would want payment made. On the basis we're buying the materials (other than sundry items), how would you expect payments to be scheduled? I would presume any significant upfront deposit isn't really justified if we're paying for materials separately, and something ought to be held back until the job is definitely complete, but what does the middle ground normally look like?

I've only ever paid after completion of the job, for all bathroom and plumbing refurbs, respective of who bought he materials. Was recently asked for a £500 deposit on a £3000 job (small job, plumber supplying all materials) and obviously was happy to pay that but then they never sent me the bank details and just invoiced the full job at the end.1
