Reasonable Refund Timings - 12 months??

Our wedding food provider has agreed a partial refund for a reception event that is not going ahead. However, they are trying to suggest the refund will be made in instalments over the next 12 months!? What are the rules here?
I understand they must be in a difficult position and will be losing a lot of business, I’m willing to be reasonable but I feel like 12 months must be exceeding some consumer refund fairness rule? Also the event was postponed earlier in the year due to Covid so they have already held the money for well over 6 months.
Any advice you can provide is much appreciated. Also if there is guidance for this in a consumer law document can you direct me to it so I can read it.
