Persimmon head office have unofficially agreed to wait for us, as long as we complete by the end of September which buys us 5 weeks! Our solicitor says it's doable, as long as there are no unforeseen delays in the chain (searches, etc). So I'm staying hopeful - for now!1 -

Never make any assumptions. I'm surprised that Persimmon are allowing people to exchange and complete on the same day as many other developers expect people to exchange but with a COVID rider which allows you to get out if you lose job, mortgage offer, etc with full return of deposit.
Personally, I would never exchange and complete on the same day.0
