Court date 28th August - would really appreciate some guidance

If this has never happened because the scammers recorded the incorrect VRM perhaps the scammers never obtained the correct keeper details.
I suggest you ask the DVLA who obtained keeper details and when for the correct VRM from a date just before the alleged event until now. Also ask for proof that you have never been the keeper of a vehicle with the other VRM.
State that you believe this service is free. You will need to supply proof of ID such as a copy of the V5C or redacted utility bills.

Whilst his defence may well be valid, brief though it is, once the court process has started it is virtually impossible to stop unless the claimant discontinues. Since the court procedure has not been followed by the defendant, you are at risk of a default judgement if the scammers send a draft order to the court asking for the case to be found in the claimant's favour because of this.
I suggest you immediately send a WS to the court and the scammers by email this afternoon in the hope that the claimant hasn't already asked for the claim to be found in their favour.
If the defendant is shielding, or furloughed, or ill, or otherwise unable to access emails and documents from their work address, then that reason for missing the court's deadlines should be given to the court, but only if it is true.
Ideally you should send your evidence that neither of you were the owner, keeper, or driver of the vehicle in question, but I doubt you will get a response today as the DVLA normally post this information even if the request is made by email.
This all needs to come from the defendant.
You should also send a correction notice to the DPO of the scammers giving them the defendant's correct address for service.
