Italian Hotel refuses to refund

Just wanted to see if anyone could offer advice.
I have a hotel in Sorento booked for September (booked this in January pre-Covid19). EasyJet last week cancelled my flights and refund them, however we booked the hotel direct and they are offering a 1 year voucher for the full cost of our original stay BUT no refund. It was a non refundable booking but this was done in good faith pre-covid. I am not sure if I will be able to use the offered vouchers within a year. Do I have any other options in terms of claiming the money back, I have insurance but I will lose £200 because of me policy excess.
Any advice or experiences of this would be helpful.

Italian law allows for the issue of a voucher which will rule out any claim under S75 or travel insurance. If you don't use the voucher then you get a refund after a year0

Find alternative flights.
The hotel is being very reasonable, especially as it was a non refundable rate.1 -
What do you mean when you say it was booked in good faith precovid but non refundable? That’s kind of the point (what’s happened) of non refundable bookings).0

Not sure what good faith has to do with anything - you booked a non refundable rate so you can’t have a refund.If I was the hotel and had gone out my way to offer a voucher (which they don’t need to do, they’re in the rights to do nothing) and got no thanks but a push for a refund, I’d probably withdraw the voucher offer so be careful.Claiming back via the source of payment won’t work, as the hotel is open and ready to let you stay.0

The hotel offered a room in good faith and are still ready and able to provide that - so I can understand why they are not offering a refund. If you had booked this as a package, I believe the cancelled flights would have meant that the whole holiday could be reclaimed, but booking separately means that they are treated as different entities.It's not difficult!

Get new flights, Italian law permits this. I experienced the same 1 month back. No way around this.1

Either book new flights and use the hotel stay, see if they will adjust dates if needed.

I wouldn't expect your insurance to pay out anyway, since the hotel is open and you are disinclined to travel. The hotel is under no obligation to even offer a voucher. As others have said, look at other flight providers: there should be options with BA and Ryanair.No free lunch, and no free laptop
