Office 2019 default font change

How do I set the default font on all the 'single spaced (blank)'. I want verdana and 10 zoom?

In Word 2019, when I select something to copy, paste, etc. It's very light grey and have to look closely to see which ones are grey out and which ones I can select? Any idea I can change the colour, so I can see without looking too closely?

This is normally controlled by the theme/desktop customisation in Windows.  However this was removed with Windows 8 upwards so it may not be changeable any longer.
