I don't think there's an exhaustive list of professions that can countersign passports any longer. I'd certainly go with the carer. If there is a problem, there's plenty of time to sort it out.

I think what the Post Office is a checking procedure where (for a fee) they'll look through the form for any obvious errors like he signature being outside the box. ☹
Yes there is such a list, it's on the UK Government's current passport application guidance page.
Thanks. I worded it badly. I know there is a list but  they're just examples, it's not exhaustive or exclusive. I could be wrong but I'm sure the addition of anyone with good standing is a relatively new thing.

At twenty you can't have long left education, is there no teacher/lecturer who can sign it for you?

Imagine someone holding forth on biology whose only knowledge of the subject is the Book of British Birds, and you have a rough idea of what it feels like to read Richard Dawkins on theology: Terry Eagleton

Yes, a former teacher or lecturer might be an option - as I recall, they are signing to say they know you and that the photo is of you, so they don't need to be physically near you, if you can contact someone like that and they agree to sign then you should be able to post them the forms and a SAE and then they can post them back to you.

If you have previously had a child's passport, you do not need a countersignature for your first adult passport. My 17 year old son just received his adult passport and did not require a countersignature.

I've signed a couple of friends passport applications. I was not employed  in any of the list of professions.
