I've stupidly not got insurance yet for a package holiday next week that's looking likely to be cancelled, is there anything I can now to ensure I get a refund or will I lose everything?

That depends on who is cancelling it.1

Why will it be cancelled?
If the operator or airline has cancelled all or part of your trip then you'll be entitled to a refund from those suppliers.
You can't insure for a known event so you won't get cover now for a holiday which you know you'll be cancelling.
If it is a case of you not wanting to travel because of coronavirus, but the holiday is going ahead, then travel insurance would have been unlikely to help anyway.
And it goes without saying, which I suspect you realise now, the time to buy travel insurance is immediately after buying the holiday.

I'm booked through Teletext Holidays but it's a Thomson flight0

What is the destination?0

I'm due to fly with Thomson on the 29th July to Rhodes but from what I can see they aren't flying until Aug, yes I now realise about getting insurance first 🙈0

If the holiday goes ahead and you don't go then you are a no show.
Disinclination to travel (you don't want to go ) is not covered by any travel insuranceEx forum ambassador

You're providing information slowly which makes it a bit trickier to offer advice...
Is it a package holiday? (Flights and hotel booked and payed for together and an ATOL certificate issued?)
If it is then you will be entitled to a full refund if they cancel the holiday. If the TUI flights isn't going ahead I would say it's likely they will cancel.
What are Teletext saying?1 -
Sorry, yes it's a package holiday, all flights, hotels, transfers etc paid together through Teletext, I have received an ATOL certificate, thanks for the advice.
I can't get in touch with Teletext.

Where did you see they weren't flying until august? The TUI website will sell you a flight from London to Rhodes on the 29th July.
