Christmas Pudding Ice Cream??

Hi

I have an ice cream maker and have made a few different ice creams from the fabulous Ben & Jerrys book, most of which involve no heating of ingredients. I'm after a similar recipe for Christmas Pudding ice cream if anyone has one? have tried googling for it but all i can find involve heating the cream (something I'd like to avoid as I'm a disater with a cooker!)

    A number of websites seem to suggest blending ready made ice cream of some variety and actual christmas pudding, but not so sure about that myself!

    Don't know if this is any use but a cheat's version would be :

    Ice cream
    Mincemeat
    Xmas cake

    Line a bowl with clingfilm, mix ingredients as above and pour in. Brandy optional .:beer:
    Freeze for a couple of hours - xmas pudding icecream !:j

    but i saw an episode of 'cookng the books' yesterday i think and one of the chef made a chrimbo pud ice cream pudding thing....

    a good cheat ice cream is a tin of ready made custard and christmas pudding broken up into peices in your ice cream maker until frozen its lovely

    Last year my friend made Christmas Pudding ice cream and really lovely Toblerone parcels. These are individual pieces of Toblerone wrapped in filo pastry and deep fried. They were really scrummy.

    I don't have an icecream maker, but do make chrsitmas pudding icecream:

    Cornish (= any really creamy) icecream
    Good quality mincemeat
    splosh of brandy

    Soften the icecream a little until you can stir in the mincemeat. Aim to get it evenly stirred through. Add a little brandy to taste. Freeze.

    I freeze this in the serving dish, with clingfilm over the top.
    I can cook and sew, make flowers grow.

    Lakenham Creamery ice cream may, I think, be only available in East Anglia but they do a Christmas Pudding one - delicious, absolutely bursting with boozy flavour. They also have an apricot & brandy flavour this year.
  • :rudolf: Thanks Chris25, but I'm in Northern Ireland - a bit far for a pudding to travel :rotfl: [christmas that is!]. Think I'm needing a big chain supermarket [tried S'Burys, Tesco and Asda], but nothing so far.
