You would expect any company specialising in weddings to take credit cards - the fact that they don't is a red flag and the reason they give is feeble to say the least.

Paypal does have buyer protection but from memory it is for goods/services not received and does not cover 'not as advertised' or if it does there are a lot of hoops to jump through - Google to find out tales of woe with Paypal buyer protection. You may be protected if you get no wedding at all (but if the company are acting as your agent and simple booking places for you then you might not even get this), but not if the wedding does not meet your expectations.

As for wedding insurance, check that is covers payment to scammers and the like - not saying your company is but just be aware of what your insurance does and does not cover.

You have to ask yourself what kind of company does not have credit card services

Someone who doesn't want to offer charge backs.

You certainly can open claims when things aren't as advertised.
But Paypal is pretty random. It can be much easier to get a refund from them than it is from your credit card, but if their decision goes against you then you can't go to the ombudsman.
I wouldn't be planning on a wedding in the US for a good while yet, with the way they are handing covid right now then they might be in the middle of their 3rd or 4th wave & the company you are dealing with may have disappeared.
Paypal protection only covers you for 180 days from the transaction.
