This is a valid point, but they have copied and pasted the photo onto a PDF type document. The camera itself is the only way that could possibly provide that information, but what are the chances of that every appearing in court

Take it from a professional photographer that it is not the camera only that holds that information.  The file itself (unless the information has been stripped from it) will tell you the camera model and make, the lens, aperture, shutter speed, the focal length and ISO number.  If the camera is fitted with a gps receiver it may well show the location also.

Will an image embedded in a PDF file retain such information?

(I actually suspect that it was a Word file that was printed to PDF before being sent to the OP).

No, it won't. Because it's no longer an image file - and the EXIF metadata is part of that image file.
