Restructuring Counter Proposal

The business I work for is currently going through a restructuring process.
A selection of workload has been moved to sit with one individual. This workload is significant and will max out their workload twice fold. We showed this by listing tasks and the capacity it uses up by week.
The businesses retort was that they feel our numbers are exaggerated and that we must prove the numbers for them to reconsider the proposal.
As a team, we are stumped as to how we price how long something takes. So I wonder, does anyone have any advice on how to proceed?
