    I'm puzzled as to how the OP thinks they are going to pay a mortgage if they don't have a job. Either they have a deep pot of extra savings or they have their rose-tinted spectacles on and think they will get another job straight away!  I would advise thinking twice about giving up a job in these unsettled times.

    You cannot possibly both give up your jobs, find a new place to live in a new area (let alone buy), then look for new jobs.  That makes no sense.  Find new jobs first and then rent somewhere close to them.

    Will anyone even consider giving us a mortgage when we our planning to relocate and quit our jobs? 

    No.

    You wont get a mortgage if you quit your jobs, why would they give you a mortgage when you have no way to pay it going forward?

    If you want to relocate, find a property you want, move in while still working where you are, do the longer commute while you are looking for jobs closer to your new home.  Or, start looking now and get jobs lined up.  Keep in mind that mortgage providers don't like it very much if you haven't had your job long.

    We are in the process of doing exactly this at the moment - we are moving about 65 miles south of where we are.  My job isn't impacted except by a longer commute into London and my husband already has a new role lined up to start later in the year.
