I have been informed that I should post my SAR and not email it across ... Is this the case? Also is it mandatory to attach documents such as utilities bills to verify my identity?

Who informed you that you should post an SAR? C-m's post immediately before yours tells you about emailing it.
Email is quicker and easier. Just ensure you take a screenshot and/or send a copy to yourself.
If you have to post it, send it first class from a Post Office counter and obtain a free proof of posting.
You need to include some form of ID such as a copy of your V5C or a redacted utility bills/bank statements.
