Do i risk a short trip to Italy with no insurance cover for Covid?

I had planned to go to Italy for a week in September but hadn't booked anything due to waiting for a hospital scan at the time (in March) so I couldn't renew my insurance. Now it is virtually impossible to get any cover for Covid (even though the FCO advice about essential travel is changing)  yet many people are booking flights and going away. I am reluctant to abandon my plans but don't feel I can rely on the EHIC card (while still valid). If I leave my booking until next year, there will be no EHIC cover either. Many people seem to be booking trips now. how are they getting round the lack of cover? The no cover for Covid could easily go on for years unless a vaccination is available?
