It is probably not advisable to pay anybody in full at the end of a job unless you are completely satisfied with the work done

You said that there were 'loads of mistakes' to rectify so maybe it would have been a good idea to hold a bit back until the mistakes were rectified

What work was done? Is it what they agreed to in the messages?
What are the mistakes and how much is it going to cost to put them right?
You may need to get someone else to come round, quote on it and give their opinion on the work done for the price that you paid.

In my message to him on my phone it states to them what work is actually required also they have put pictures on their own website of my garden in stages why will the bank not accept all this evidence and why did they not tell me the correct information I needed until it was way too late ???
It's perhaps worth bearing in mind that when making a section 75 claim, you're not asking your bank to help you claim against a merchant, you're formally holding the bank legally liable for the alleged breach of contract.  Naturally, they're starting from a position of knowing nothing at all about the contract, its terms, what the alleged breach is and what can be done to remedy it, so it shouldn't be a surprise that they need plenty of clear documentary evidence.
