Brittany Ferries are only offering vouchers for my corona cancelled crossing to Santander. Can I insist on a cash refund? They refuse to refund the deposit at all!

We accepted 2 x vouchers covering each leg of a return trip to Santander cancelled in May 2020 due to Covid-19. I have today tried to rebook the trip to find I can only use one voucher per leg of the new return trip. The site directs you to book 2 separate trips to use both vouchers but then the price per leg doubles in price. They also offered a 15% discount if we rebooked before 31 July 2020. I have tried to call their customers service lines are constantly busy and they are only committing to come back to your emails within 35 days. Does anyone have an answer to what can we do and can we now demand a full refund?0
