Chimney research

Moved to thatched cottage last year. Need to replace flues (old asbestos already removed) and would like better understanding of existing brick chimney structures. Particularly interested in trying to date when chimneys were built. It appears they're more recent than cottage itself. Anyone able to explain why there are jutting out brick layers? Is it possible to roughly date structure from this type of feature? For example, is this Victorian masonry or perhaps earlier? Many thanks,

Jutting out bricks mean that rainwater drips away from the stack rather than just running down it. Not sure how much difference it makes though. Also - it looks more interesting than straight.2
