If you are made redundant i understand you are entitled to be paid for holiday time accrued but not taken, but what about lieu time accrued but not taken?

You are entitled to the holiday accrued and notice period depending on contract. They can either make you work the notice period or just pay you the notice period depending on the employer.

My company will pay Holiday accrued, along with three months in lieu of notice but I have worked an additional Ten shifts over the last 8 months and didn't take pay with the intention of using them to extend a planned holiday next year. So I've worked them hours and wondered if the company are obliged to pay me the equivalent pay rate for them hours?0

If you worked them then you are still owed them. So they should either pay you for it or make you take it of during your notice period.
