Hotel only Booking ( Virgin Holidays )

Have a booking for a Las Vegas Hotel for September with Virgin Holidays ( booked online )
Obviously as it stands now, the FCO essential travel advice still stands, and USA not allowing tourists in - but in any case my wife and myself have decided we no longer want to go to Vegas.
I'm not sure how to play this - our final payment is due on June 19 for £311 ( which i know is small beer compared to other final payments that people are juggling whether to pay )
So far have paid a £350 deposit plus a further payment of £544 ( which was a conversion from Virgin Flying Club Points )
Had a recent email from Virgin , i can delay payments by choosing a new time to travel and amend travelup to 31/12/2021 ( no change fee before 30 September 2020 ) I can choose a new destination if i want to. One snag with that is still being tied to Virgin given how they are treating customers at present.....
Is it best to pay the final payment ? Does that give me more options going forward ? I paid deposit by C/C ( Virgin Atlantic C/C ironically ) and if i pay final amount, will be via same method. We have travel insurance, and also paid for travel disruption add-on ( before cut-off date StaySure as we have medical conditions ).
I dont think i have any ABTA protection as its not a package, although i did book an excursion ( helicopter trip ) on same booking, so i dont know whether that somehow converts it into a package.
Any help/advice appreciated, thanks.

I dont think they should insist on customer being totally specific this far in advance..Is it best to pay the final payment in my circumstances ?
