I keep my potatoes in Primark carrier bags in the (attached) garage.
As soon as I buy them I tear open the plastic bags and let them dry before putting them in the bags.
Sometimes if I've not used the 'old' potatoes, they do sprout a bit but I boil, mash and freeze them and they taste fine.
I know some people don't like frozen mashed potatoes, I use very little butter and no milk when mashing.

I store mine under the sink. its dark and cold under there so its ideal. I live alone now so I buy a little 500g bag from aldi and thats ok for me. if I dont use them all maybe the last few will start shooting,so I either brake off the shoots and eat them or bin them. I once bought a large bag of spuds from a farmer and kept them in the shed. only problem was as I was using them from the top the mice were helping themselves to them from the bottom! so didn't do that again.
