I was thinking about woodstain until I saw that I won't be able to remove this last layer of paint. I've sanded it but this is the best it's going to be.

The stain needs to be taken in by the wood. Where paint remains the uptake of stain will be different, possibly no uptake if the paint is non-porous. The easiest way forward is probably to paint, undercoat to give a consistent base then topcoat in the colour you want. Or if your happy with a rough look try the stain. If you are dead set on staining and want a good finish then you will need to put in some more work or get someone else to. A wire brush may help get rid of more paint or if you think it is worth it you could send the doors to be stripped.
