To ask "What's the difference between a will and a trust fund" is like asking "whats the difference between a fish and a bicycle" (to reuse an old meme).Get her to write down what she wants and then a solicitor to draw up the will, you've done the main bit getting her to see sense, forget the amateur hour legal stuff though, next step convince her for goodness sake get a divorce (BTW I love "She's single but not divorced" ... aka "she's married" and make sure it comes with a clean financial settlement.

A will is a document which, provided it satisfies certain legal requirements, gives binding directions (albeit sometimes open to challenge) on how someone's assets should be distributed when they die.
A trust fund is a legal entity which is controlled by trustees, who hold property/assets on trust for the beneficiaries of the trust.0
