they move all extras as per usual.
Even if you  change  destination. Tho easyjet are not taking any bookings(payments) for rearranged flights whatsoever
So if they are moving all extras across, then it is a possibility that the cost for rebooking is shown on the basis of those extras being included, and not the headline fare you'd get from doing a fresh search on the easyJet homepage.
What would mean over £100 extras per person, wonder if they selected the seat next to the pilot?

With a return  seats & luggage it could be that.
Whilst it might be surprising, like you say if people buy a bag each and reserve seats, you can quite easily be getting up to £100 in extras. It’s the business model of the low cost airline.  Nobody is making any money flying people Munich-Manchester for £10.75.

The prices in the screenshot weren't flight prices, but prices added to the  original ticket for a rearranged flight

Your screenshot is not extraordinary showing different costs for different days, with a massive hike on a flight out of Munich on the scheduled last day of the (now cancelled) Octoberfest.  They roughly reflect the day to day differences I can see doing a dummy booking now, with you having paid about £40 for the original flight.

This is no help to the OP who claims to have an anomaly in the prices offered for rebooking as opposed to a new booking.  More info on dates and what exactly the OP booked might help us figure out their issue.
