Separate hotel and flight booking-cancellation?

Hi,
Please could someone give me some advice?
We've got a holiday booked for late July. Flights are booked with Easyjet, accommodation is booked directly with the hotel and is "non-refundable". We have insurance with Coverwise.
The issue is- we want to either cancel or rearrange or trip. The hotel will let us amend the booking for any time until December 2021. Easyjet will only let us rearrange flights until May 2021. However, we can only go/amend the booking for the 6 week summer holiday July/August due to work/university.
Our travel insurance wont cover us till nearer the time, but we're very wary that travel restrictions may be lifted, but we'll be spending a lot of money on a holiday where we cant actually do anything, with quarantine and distancing rules.
Please could someone advise me in what we could do?
Should we just wait and see and potentially spend a lot of money on a holiday we cant enjoy? Should we try to cancel via the insurance company and explain the situation?
