Advice on late deals

Hi,
Wanting some advice on how these work. I've never done it before this way.
When booking a late deal, when is generally the best time to get on? I.e a month before?
What sort of savings can you expect? So if a holiday in total was say £1500, could I get it for something like under £1000?
Do you choose the hotel / times?
Apologies for being a pain. Appreciate any help. Got a few personal issues so looking to get a few trips abroad as we never know what tomorrow will bring.

However I have no idea what the market will look like once we start getting back from this current pandemic , with airlines cutting routes or number of flights and some airlines folding entirely there may be fewer flights and less last minute availability. On the other hand with people reluctant to fly due to having lost money on cancelled holidays or being unable to get suitable insurance there may be more.
