Want to rebook July 2020 Easyjet flight for 2021

We had booked to fly to Inverness (from southern England) in July for a few days.  I really do not fancy going now and so have cancelled car hire and hotel with no issues.
The problem is the Easyjet flight.  I'm more than happy to reschedule for next July but flights are only released up to early May 2021.  We chose July so it would be warm for our Loch Ness hunting so I don't particularly want to go in October or the Easter holidays... but I can't get a refund and yesterday's news of domestic Easy jet flights resuming from June means the flight is unlikely to be cancelled.    But I can't rebook either.

Amending the flight is currently free.  Is my best bet to reschedule to an October 2020 half term or Easter holidays 2021 flight (trying to keep as close as possible to the original price paid) and then change the flight again once July 2021 flights are released and pay whatever amendment fee applies at that time?  Do EAsyjet allow flight dates to be changed more than once?

They probably do but at some point it will no longer be fee-free to change it.
