I'd absolutely do both. Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

Thanks all, your advice is more than appreciated. I’ll make sure to let you know when I beat these clowns in court as it’s as much your victory as mine!1

Update - I have received an email today stating that UK-CPM have cancelled the case. The email that came back was pretty funny. After their litigation manager said that there was no way this could be cancelled and that clause 2.7 wasn't relevant as the case had passed 200 days. In the response they stated "I apologise for not picking up on this clause", even though it was highlighted in every email, multiple times. Its comedic that they try and take the high ground at any point in this! Question - What happens now? How can I confirm that this court case has been cancelled as I am due to put my pack into court next week and I'm not going to bother if it has actually been cancelled!
Genuinely, to everyone on this forum, thank you so much. You are making sure that innocent people aren't being stung when it is not deserved and hopefully, all your efforts will put a few more restrictions on this cowboy industry!2 -
Call the court to check they've had cancellation notification. If they can't confirm you need to plough on as if you'd heard nothing from the PPC. This ensures you don't sleepwalk into a automatic judgment in default with its CCJ and attendant risk of a credit record blemish. Please note, we are not a legal advice forum. Final update on this one, I today had confirmation from the court that this case has been discontinued. I am now going to get in touch with all the residents of the block that I used to live in to tell them this story to make sure UK-CPM don't do the same thing to them. I have been informed by the land owner they are also keeping my case on file as a case study for its staff which I hope also makes things easier for the residents that are still there.3

You could sue them
THey raised a claim they had no chance of winning,
You coudl also sue the company that hired them.1 -

No chance the landowner will change this clause when leant on by UKCPM, then?
2.7 The contractor shall rescind, without condition, any outstanding parking charge at the request of the proprietor.

I really hope they wont. The issue is the landowner is a very big company so they have a lot of contracts with CPM. Realistically they should hold all the cards here but they may also just fold like you said to keep the peace. Thank you again everyone for your help!1
