Unfortunately some judges still believe that the PPCs have a case, only a court hearing can identify who they are.  Contract law is not written in stone, Beavis told us that.

The signs are fundamental to your case and therefore are very relevant. You really need to get your own pics of the site and signage. You say yourself the scammers have failed to include any relating to the charging point. I find this very suspicious.
The signage forms the contract with the driver. You need to know what the contract was/is for a driver using the charging station, not just for a motorist entering the general part of the car park.
Are there signs saying a motorist using the charging point must enter their VRM? Are there signs saying a motorist is exempt from doing this when using the charging point? Are there any limitations of use, or additional requirements? Are they clear, concise, and unambiguous? Are there any signs saying use of the charging point will incur a parking charge?

    Understood.

This is a good point.  While proving the absence of a thing is always going to be problematic, I would argue that being asked to make a payment, over and above the cost of the fuel, for fueling a vehicle is not something that anyone might expect.  If there is no sign indicating that a payment is due then plainly this thing with Parking Eye is spurious: no payment is due, no-one has lost anything, what's all the fuss about?

Does that make some sort of sense?

Yes and no.  Please don't mention 'no-one has lost anything' or P/Eye will laugh long and hard.

You haven't read Beavis, have you?

@chutki if you click on OP username it reveals their profile and states when they were last active on the forum.

Sadly some posters don't bother to come back to give the outcome on their thread.
