Incidentally, the Sony app doesn't affect the connection, it's just a way of allowing you to adjust settings etc. of the Sony earbuds.
Back to your original question, I'm afraid JL are correct. They are compatible and, as you've said they work with other phones/laptops, they're clearly not faulty.
I have no idea why Sony said they weren't compatible, but I suspect there were some crossed wires or the poorly paid person sitting in the call centre wasn't quite clear on the issue.3 -

But it doesn't solve the issue with your faulty iPhone.2 -
Did you do a fresh install of the new SE, or restore from backup (from old iphone 8). If restore - try doing a reset of network settings (not any of the other reset options!). You'll need to reenter wifi passwords as well.
There are some issues with the current iOS it appears, in the wifi/bluetooth, which hopefully will be fixed in the next patch. Google "wifi keeps disconnecting ios 13" to see them all...Peter

Examples
A server I have at at home will not power up both a NOW TV stick and charge my phone if both are plugged in at the same time.
All 3 items are compatible with USB standards
WiFi N spec was a disaster when it first came out as manufacturers had their own interpretations
I would be inclined to believe Sony and tread cautiously about advice from some random person on a forum who has no idea if they actually work correctly in the real world

Signed up with John Lewis for switch over to them on 25 Masy and was told it woud take effict on 6th June paid despoist and told yesterday it will not take effice until 9th June which I was not expecting, now wating for them to return my depost and looking for new provider for boradband and phone with with evening and weekend calls. Been through them all not sure what NOW broadband means when it says prices may change throughout contract? Any help please with what this mean?0

Erm - it means exactly what it says ... your contract price is not fixed for the term of the contract, it is liable to change. (Probably annually in line with CPI rate. That's what BT do - and make this fact very clear).0

Deciphered your post. Basically you switched to John Lewis contract, but you cannot wait an additional 3 days to implement? So have cancelled and looking at Now broadband. You are looking at a deal that is not fixed, so prices may go up during period. NOW will notify you regards any increase.
Hopefully your new deal will be implemented before June 6th?
