Just had my holiday for 6 cancelled to Orlando, dial a flight refunding everything, in time, however 10% cancellation fee for Disney/ universal tickets, comes to £350 for us. A lot of money, no way we can rebook, 2 different families, so is this legal and if yes why? I can’t get there, not in the next couple years anyway

Who did you book the tickets with? Have you read their terms and conditions?

We're in the same boat - 10% "cancellation fee" even though the parks were closed on the dates we were meant to be there. We booked it as a package through Stewart Travel but they are saying they can't refund it unless their supplier refunds them. They've told us to go to our insurance or credit card to claim back the 10%

They are incorrect  as you bought it as a package  then you are entitled to a full refund from them.
Tell them you want your full refund due,  and advise them to claim that 10% on their insurance.
