After Coleorectal Cancer

Hi all,
I'm looking for advice please, to help me with my girlfriend. She's overcame stage 3 Coleorectal cancer and is, thankfully, in remission.
We've been together for three months and we've just clicked and get on so well.
My question is regarding food, as she can't eat things due to her surgery and the effect things have on her. She can't eat tomatoes or tomato based sauces as they cause havoc to her, so we cook from scratch together.
However, with lots of recipes being tomato based, does anyone know a substitute that tastes similar but won't cause her any issues?

When you say you cook together, does that mean you've moved in together when lockdown started? That's very early on in a new relationship!
Is it the whole tomato that causes a problem or the skin?0 -
Try the old style bit of the forum - that'll probably get yout a wider response as all the people who do miracles with food and budgets post in there.

How about peppers? You could grill one and mash it up or even get those soft ones in oil that taste a bit smoky. Add a bit of sugar or balsamic vinegar ? I think there would be a support group that provides suggestions for people with dietary needs after cancer / surgery. Maybe Google for one. Good luck!0

I do not like tomato sauces or tomato based foods but I have never found it difficult to find recipes that do not include them.0
