So I booked and paid for a holiday in Majorca last sept. My wife now does not want to go, it’s in July. Do I hope the the holiday company cancels it, or do I just have to go, if they say so. Also I have rolling travel insurance with bank, it is due to renew before I go. Will my holiday still be covered as it was booked at the time, or will the new travel insurance now be invalid for that holiday as it won’t cover covid 19.

You won't be covered for COVID19 with new insurance
It will depend on is Government advice at the time, and what's happening in Spain
If it's fully paid and non-cancellable then all you can do is wait and hope it is cancelled by them.
Personally I think it will be, but no one can know for sure.
