Canceling bookings

Trying to get your money back is like trying to plant fog. I booked hotel and parking with holiday extras. When I cancelled they emailed a credit note. I'm not sure when I will be going on holiday again and I may not need hotel and parking. I tried to contact them all the phone lines are closed , chat is off line and they don't supply an email address. Exactly the same with jet2 holidays. The 14 day refund policy is just not working . I need that money back its over a thousand pound
