Childs savings options

Hi, I am trying to find a childs savings account which doesnt automatically become available to the child when they reach 16, 18 or 21. I want to save for them, but chose when they have it. Must be something out there, my parents did it for me and it was a wonderful surprise when I had it. It wasnt automatically given to me when i reached of age it was presented to me when my parents felt it was time.
I want to save small amounts into it monthly. I've already made the mistake of setting up an ISA for my first child and now it stuck in a low interest account
Also want it so we can withdraw/move to another provider if rates changed, but have also been thinking would stocks and shares be a better option.
Any advice much appreciated.

Why stuck? Why not transfer to a better rate?

If you want control of when you make a gift, then you will need to save in your own name - you should make a specific mention in your will that the proceeds of ( abc) account are to go to "my child XY/ to be shared equally between my children XY/CD/ GF").
And if you have opened a JISA for one child, in the interest of fairness, shouldn't you do the same for the others?
