Blanched almonds help

I need some blanched almonds for a recipe. what exactly does this mean!

  • It means whole almonds with the brown skin removed so that they look white or blanched. You can find them in the baking section of a supermarket.

    BTW if it's for a Christmas cake/ pudding/mincemeat it really won't make a huge difference if they aren't blanched ;)

    I leave the skins on for pudding and cakes. They're considerably cheaper and extra roughage ;)

    Oh, good point, I hadn't realised they were cheaper.
  • The ones with skins on are definitely cheaper, but if they have to be blanched almonds and you're short of dosh, you can remove the skins with boiling water (very fiddly though!)

    Def worth doing this though as the skin has a slightly bitter astringency to it - all you have to do is drop the unblanched almonds in boiling water for a min or so and then into cold water - you should be able to squeeze the skin of a bit like shelling peas.

    they`re easy to blanch yourself. We brought a big bag of almonds back from sicily and I blanche them when needed. Just pour boiling water on some in a bowl. Leave a few minutes and the skins just slide off whole. Very quick and easy

    WHole almonds are available at Julian Graves on special offer. I can't remember what the offer was though, it might have been 3 for 2 or something. (I'm not talking about the 20% off which finished yesterday).
