I want a recipe for a Rolo Toffee type mousse

I am thinking of making chocolate pots for christmas day and then putting a soft toffee first layer, like the one in Rolo desserts. I then plan to top this with my home made mousse recipe or a white choc mousse, need recipe, to top it off. I plan to decorate it with chocolate that has been melted and drizzled onto greaseproof then broken up to stick on top, white if I do milk choc and plain/milk if I do white mousse.
If anyone has a recipe for the toffee base I would appreciate it, it needs to be soft but not runny.

you might do better asking on the old style board.
a really easy cheat for this would be to use a jar of dulche du leche, which is spreadable toffee/caramel spread (great description!...try here for a better one http://en.wikipedia.org/wiki/Dulce_de_leche )
or you can make your own by heating a can of condensed milk0 -

or you can make your own by heating a can of condensed milk
If you are going to heat a tin of condensed milk, then do not open it or pierce the can. Put it in a pan of water large enough to allow the can to float and simmer very gently for 2 hours - top up with water from the kettle as necessary.
Allow to cool before opening. The contents will be tan coloured.0 -

I once made this caramel mousse - it was very easy and it was on an ITV programme - I can't remember which one..
It would be nice with a chocolate layer on top, but it did set, I think perhaps you wanted a runnier texture?- 1Tablespoon milk
- 3 x 62.5g Mars Bars, thinly sliced
- 300 ml (1/2 pint) double cream, lightly whipped.
- Whipped cream , to decorate.
- Bag of Maltesers.
Directions- Put the milk and Mars Bars together in a heatproof bowl. Melt over hot water or in the microwave on full power for about 2 minutes, stirring half way through, until smooth and completely melted.
- Set aside to cool a little.
- Mix a couple of tablespoons of the whipped cream into the caramel mixture and fold in the remaining whipped cream and spoon into 4 x size 1 ramekins or glasses.
- Transfer to the fridge to set for about an hour for a soft set or over night for a firmer set.
- Decorate with a blob of cream and sliced or whole Maltesers.
Still yummy though..
