Thanks for all your help/comments. 

I emailed the brewery with bank statements for the meal purchased during the visit and they have cancelled the parking fine “as an act of good will”

I had no joy with the pub or brewery they send a standard response with no reference to individual points raised. 
But I used the template letter and just heard they have cancelled the ticket.
