Company stating they will only refund a roll over credit note for future trips

I'm a student who booked onto a university ski trip through a travel company named Wasteland Ski and due to the coronavirus pandemic obviously the trip was cancelled. Since cancelling, the company have refunded us anything we paid on top of the £499 booking fee but are insisting on only refunding the £499 as a credit not for future trips. If possible, how do i go about claiming my money back instead of as a credit note.
