Where. My friend owns a farm with loads dead trees, and he asked me go any time. Also side my house, the council guys are chopping down a few trees, and they are more than happy me take away any logs.
Ah,that sounds very different from: "I live in rural area, with lots big dead trees and branches lying round, that I can cut and take away......When Im in my van I can stop cut wood fill (the) bags and Im good for few months."
    Do you see the difference?

    Theft??
If it is on the floor then it is fair game, I often come back from walking my dog with fallen branches for my stove.
During the last couple of storms a lot of trees blew down where I walk my dog, someone has been and cut them up in to chunks and just left them so they are there for the taking

People with an attitude and level of understanding like yours are the reason people like me are pleased not to have any rights of way across our land.
In your world, it's not for the landowner to decide whether they want to collect the winter's chain saw work with a truck at the end all in one go, or perhaps to make a log pile and leave some material to rot down for the wildlife.
No, you know better, because you understand the countryside best and, quite obviously,  "they are there for the taking."

A friend was challenged  by a landowner when his dog was carrying a fallen branch and told it was theft.

Carrying away a branch that is small enough to walk with isn't an especially big deal, but the OP was talking about driving around in a van, seeing some wood, stopping, cutting it up and loading it into bags.
I have a van, and living in the country, I see lots of potential firewood while driving around. It would be very easy to park up, whip out the Stihl and quietly lop off a few trunks, but I don't do that because it's wrong, simple as that.
