Remote control for Canon camera

I have a canon800d and a rc6 remote.   I can only get it to fire remotely when it is on a timer.  I want to photograph birds and the timer scares them so its not much good.  Am I using this correctly?
I also want a remote for the video function so I can zoom, pan and focus without camera shake.  Can anyone recommend one?

    Please excuse my ignorance here. 
    I have worked out how to get photos from my camera to my phone.  I think I used camera connect.  So does that mean I can do all of the above with my phone?

    Many thanks.  Have just realized that I can operate it with my phone but cannot use digital zoom from phone.  Presumably these cameras do not have optical zoom?   If not how can I get it?

    Digital zoom is not needed , you can use your pc to do that on the image , but I am not familiar with canon nor the app, does your camera have a manual zoom and can you work that with the app? Not much help I know , as for panning then I guess you would need a motorised mount for your tripod for that , again just guessing

    It has an optical zoom on it if you've put a zoom lens on it. I don't suppose it's motorised though, they are thousands of pounds. To be honest there's not much point having a camera that good if you are then going digitally zoom the pictures.

    True, normal method is optical zoom, then crop using whatever image processor you have

    A chap I know used to do weddings & he used DSLRs for everything.
