That SC of ragu has made ten portions. We have had past a bake twice, with one more in the fridge (the two smaller ones are being had with salad) and two meals with tagliatelle or spaghetti (and topped with a bit of grated strong cheddar). I have got a single burger and a plastic bag of chipolatas out of the freezer, but with the work outside that we are doing, a quick and filling supper has been most welcome. Still plenty of strawberries, and hopefully the rain this morning will make the homegrown onions swell tooSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Suffolk lass - I was reading your posting on the grocery challenge thread earlier and I do exactly the same with buying items in multiples when they are on offer. I started off with non food items - loo rolls, cleaning items etc as there was no use by date. Then onto tinned items, coffee and things that last a while. Now with quite a healthy stock of things my remit has changed to 'would I use it'? or 'could I substitute something cheaper by changing brand or size' Hopefully, this month my stocks will be invaluable as I need to do a bit of catching up. My DH once asked how long would my stored food last if I wasn't there. I said over a year but I never asked why he was planning for me not to be there!!!
Lunch:- squash and parsnip soup with bread rolls from freezer. LO biscuits from a clinic yesterday
Tea:- ham flan made with, lo ham from last Thursday, eggs from the chickens, lo milk from the clinic, vegs from the fridge, a potato cake with lo mash, However, I will have to make the pastry. Followed by rice pud using more of the milk and I'll find some jam in the fridge. It sounds like a LO day today.
The rice pud didn't happen due to lack of time. Instead we had a quick fruit salad made with bits of fruit from the fridge and fruit bowl, and a bit of ice-cream.5 -
Roasted half leg of lamb yesterday so have turned the LO meat into a lamb dhansak with an onion which was beginning to sprout, a couple of cloves of garlic, some grated ginger and spices plus a tin of tomatoes & stock. Made in the pressure cooker so was really quick to make. Will just need to reheat this evening and make some rice to go with it.

Ooh @zafiro1984 I panicked a bit for you. Maybe reducing your house keeping funds if you work that way
Your left overs tea sounded fab.
I actually threw a tea together last night. LO cooked paella rice where DH had said previously he didn't like it. I had put tumeric in it and it is yellow so he hasn't questioned it. 1 chicken breast, sad starting to dry mushrooms. Crushed a sprouting garlic clove. An unknown quantity of lea & perrins sauce, S&P. Last of a bag of frozen garden peas a roughly chopped onion. Half a tub of garlic and herb soft cheese. Was very tasty.

Had planned to make hunters chicken for dinner tonight but the chicken breasts I bought yesterday are a bit on the small side so have decided to chop it up and make a chicken tagine instead! Still plenty of couscous left from yesterday so will reheat some of that to have with it. Will also add the rest of the LO veg from Sunday into the tagine to stretch it a bit - may even manage to get an extra portion from it to go in the freezer with a bit of luck!

More soup for lunch, turkey and ham which I batch cooked yesterday, there's plenty more in the freezer.
Tea was scotch eggs, using own eggs plus the filling out of sausages with a bit of chilli added. Ok I know it's a cheats way of doing things but I can't be bothered doing it the proper way as it takes too long. I made a Waldorf salad for me as a side and DH had mash from the freezer Pud was rice pudding made yesterday plus a dollop of jam.
Looking in the fridge, I've a couple of unopened melons, one being a rather large watermelon which I bought for last weekend. I didn't open it as the weather changed from roasting hot to normal. I think I may have to do frozen sorbets with it. Apart from the melons I've some cheese, a bit of ham which may end up on a sandwich tomorrow, vegetables, apples, kiwi, tomatoes and a pineapple. I may end up doing yet another a fruit salad as I've some frozen blackberries and currents still in the freezer from last year which need using up before this year's crop is ready to pick.
We'll see how it goes as I've lots of catch-up jobs to do first.5 -

We had bread and jam last night. Mind you, we had honey chicken curried with spiced rice, salad and optional plain rice, and followed by summer fruits sponge with cream, at our village lunch club yesterday. It was fab (£4 each, including a really good natter!)
Oh, and Rice pudding with a dollop of jam @zafiro1984 - we do this with tinned rice pudding, but we always have HM rice pudding with just grated nutmeg on top. Mmnn - you see? now I want to make rice pudding.
I must resist as I am part way through melting and cleaning the cappings wax from our recent honey extraction, and waiting on putting the three elements of a batch of chocolate brownies together (eggs and sugar whisked and awaiting the melted butter and cocoa (vanilla and tabasco [shh]), while the flower and chopped walnuts are waiting to be added last. Can anyone give me an idea how to make curry sauce using only basic curry powder and no dairy or coconut please?I can’t eat either nor can I eat chilli hence the basic curry powder from Waitrose that doesn’t contain chilli. (Lactose intolerance but just detest coconut- chilli makes me violently ill)I want to use up veggies and some of my stored tin veg, I can go buy a jar but finding a decent dairy/coconut/chilli free jar escapes me!I like Korma style sauce but obviously impossible to find dairy or coconut free. I have had one dairy free version where the coconut was not the overwhelming taste but cannot remember the make.Life happens, live it well.2

What about the Elmlea plant based ‘cream’ - I added that to a little coconut milk I had left the other day and it worked okay. Alternatively I think Oatly do a ‘cream’. We can’t have oats here (although I’m testing my boys tolerance to it this weekend?!) so don’t use that but I’ve heard good reviews.Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay
