@Soontobeoap Convenience pie is leftover chicken, a tin of sweetcorn, a sprinkle of frozen peas (could use frozen corn if I had some) a tin of Campbell's condensed chicken soup, all mixed together in a shop-bought pastry pie! - I recommend it!
Also spaghetti pie - a pastry case flan dish filled with a tin of spaghetti mixed with fried off fridge leftovers (smoked streaky bacon, onion, carrot here, but others add mushrooms) and topped with grated cheese, then baked. Loving the various pies - although I think the spaghetti one might be a little too off the wall for MrEH - he raised a cynical eyebrow the last time I lobbed a tin of baked beans into a cottage pie!
Last night's Mutton Stew was delicious although it will improve from a little more cooking when we do take 2 later in the week - the meat wasn't quite as ready to fall off the bone as I would have liked although the flavour was superb. easy enough - I'll just get MrEH to shove it in a low oven in the late afternoon rather than heating it in the microwave as I had originally planned.
As today is tuesday it will be a standard couscous meal tonight to fit around MrEH's rugby training - and also as usual it will be a mixture of veg from the fridge roasted to go with it - I was debating getting out something pre roasted and frozen but a quick look confirmed to me that there was definitely no need as there is plenty to be used. (In fact I think tomorrow might yet need to swap from the planned chilli and rice to a stir fry - yes, THAT much veg!) It'll be topped off with halloumi, toasted seeds and yogurt and mint dressing.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

Ooh.. I must fit a pie back on my menu at some point!Breakfast today was porridge for me with the last apple and some sultanas. Lunch is celeriac soup to use up the celeriac, some onions and the rest of the leeks. Veg/fruit box is delivered Thurs morning and I officially only have 2 satsumas, 2 bananas, 6 unripe kiwis, 5 beetroot and some onions left.Just making compote with some freezer fruit so I have something to stir into my porridge tomorrow as the bananas will mysteriously disappear in the next 24 hours in this house!2025 decluttering: 3,848🌟🥉🌟💐🏅🏅🌟🥈🏅🌟🏅💐💎🌟🏅🏆🌟🏅

Using up some LO mince/lentil mix from the freezer and will add the half tin of baked beans from the fridge and turn it into a lasagne. Not had one for ages so hope it turns out OK!

Tonight is the sausage casserole, thanks to everyone's suggestions. I fried off an onion, carrot and celery stick and put to one side. Then added some cubes of sweet potato and fried off some butternut squash, seasoned flour (chilli and pepper, no salt) - I may have too much seasoning, but I'll sort that out later - dash of Worcester sauce, 2 x kallo veg stock cubes and a good pinch of mixed dried herbs Then I added some ayna potatoes which need using up and about a third of a bottle of red wine. Sausages cut in half and on top of vegetables. I'll see how that turns out as its now in the oven attached to the woodburner.

Going a little off piste this evening - the meal plan said chilli and rice but there are veggies in the fridge that need using so I'm going to go for a pasta dish with lots of lightly fried off veggies plus some cubed chorizo I think. Well - I say pasta, it might yet end up as more of a straight stir fry with a prepared sachet of mixed grains between us - we'll see how we both feel later I think! I should be able to do some damage to the rest of the radicchio and some of the bag of sprouts we got with the last veg box, anyway.
I must remember to make a note for MrEH to get the remainder of the mutton stew out of the fridge tomorrow to come to room temperature and then to get it into a low oven during the afternoon. Annoyingly the door came off the oven again when he was baking rolls yesterday so ideally I could do with finding a way of making it fit into the top oven - I'll experiment this evening.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

Lunch today is in the slow cooker - leek and potato soup - organic leeks from our lovely Ol!o lady and potatoes that needed using up along with a veg stock cube as it appears that we are out of homemade bone broth4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! Hi All
On the subject of using up leftovers, I have some leftover roast potato and parsnip and some chilli salmon, would it be too outlandish to put them on top of a margarita pizza?
What's the worst that could happen, i don't like it and pick them off? Pretty sure I've had potato on a pizza before, I think it was chips actually.
