A definite reverse meal planning today! Had planned to make kedgeree for breakfast but had forgotten DH was going out to play golf and also discovered I hadn't got any smoked haddock left in the freezer so had to do a quick reverse plan! Had a very small amount of mince in the freezer (free flow - about a handful!); some mushrooms which needed using, some cherry tomatoes. Have got the usual potatoes and onions so decided on a breakfast hash with it all cooked together in one pan and then I'll top with a couple of fried eggs. Have to admit this is a breakfast that we both enjoy and on occasion have had for lunch to use stuff up.
As DH will be having a meal provided at the golf club it'll be just me for lunch so as there was a single portion of keema curry (again very veg heavy!) I'm going to have that with some couscous as can't be bothered to cook rice for one!
Loving the stories about "freezer dives". Have to admit I'm very good about labelling stuff I put in the freezer and very rarely come across things without labels, although have on occasion where I've used a sticky label and it's fallen off but can usually see what it is - just don't know when it went into the freezer!

Thankfully the mystery meat was the lamb I thought it was and the curry was very tasty! with hindsight I should have switched it about to do for tonight instead though as it did take a while to cook and we ended up eating later than ideal.
Tonight I have already got the pork steaks out, and will do a packet of mixed grains plus some veg with those. Not quite decided *which* veg yet but it might feature courgette and runner beans.... will get the fry up ingredients for tomorrow out this evening and they can defrost in the fridge - MrEH didn't make a murmur when I said no eggs either so I've got away with that one!

Meal plan has not been as effective this month, as we've added things to the freezer/storecupboard since I made it. But we're still not buying much so grocery spends are low for the month so far. Just got some diced chicken thigh out of the freezer - might make a casserole as I've got leeks, swede and turnips that need using. Will have to add tinned carrots if I've got any as I've only got 1 small raw one left.

EH - snap! We're having pork steaks tonight. Will probably have with some mash and green veg from the freezer. The chicken is marinading in the fridge ready for tomorrow night's butter chicken.

Shakshuka is in the slow cooker - been looking through my new cookbook which is all tray-bake veggie and vegan meals and got all of a dither about what to cook as there are so many recipes I want to try but decided to stick to plan!
Dinner for another day will be miso aubergine with spring greens - looks amazing and I had a bag of spring greens left after my Olio collection that needs using up.
Need to make some leek and potato soup to use up some past their best leeks (and potatoes come to that) - it's that time of year where I have soup and salad for lunch every day. Have realised I only have half a lettuce left though so will need to pick up some salad at some point (and OJ for OH) but otherwise we're well set and shouldn't need to do a big shop for a while.3 -

No seriously, just don’t buy things. 99% of our success with our savings rate is attributed to the fact that we don’t buy things... You can and should take advantage of discounts.... But at the end of the day, the only way to truly save money is to not buy stuff. Money doesn’t walk out of your wallet on its own accord.

Dinner tonight was courtesy of a freezer dive! Two different pasta & chicken concoctions - we split them between us with some steamed carrots on the side. Second course as we were both still hungry were some convenience duck bao buns that heated easily in the microwave. A few less things in the freezer and an effortless meal on a Friday evening - WIN WIN!4 YEARS 10 MONTHS DEBT FREE!!! Reheated a vegetable tagine for dinner last night from the freezer and there was more than I thought so is going to be dinner tomorrow night! Had thought there might be enough left for my lunch but definitely too much for that!
Going to cook a gammon joint today, boiled and roasted. LOs will be sliced and frozen in portions for sandwiches, salads etc.

That pork joint is going into the slow cooker today here - it’s a nice big lump, and at a reduced price of £4.99 will do several meals for us both. About to go back and find the recipe I bookmarked…

Thai green chicken curry last night - chicken from the freezer, potatoes from the stores, straw mushrooms from a tin. Opened up a new jar of green curry paste & divided it up into 5 portions. Four went into the freezer & one used in the dinner. Also decanted a new bag of jasmine rice into the jar after using up the last of the old one. Just love the feeling of working our way through the stores on-hand. We are also down to 2 tins of coconut milk from the bulk order I did earlier in the year.
I'm aiming to only have on hand only one of each of the items we use repeatedly, as we no longer have a large larder for stores. Lack of storage is already changing the way we shop, as our weekly deliveries are slightly larger, but there is no big stock up shop as we used to have out in the stixI may have to switch out one of the weekly shops to a MrS as there are several items we quite like of theirs, and they have been plying me with large value coupons to 'go back' to them.
This morning, OH is making a batch of yogurt flatbreads - not yet sure what we will have with them - perhaps a frittata to use up some bagged salad & pancetta/grated cheese from the freezer.4 YEARS 10 MONTHS DEBT FREE!!!
