Lamb neck fillet for dinner tonight. I have never cooked with that cut before and have no idea what I am doing but it looked interesting in the supermarket. Off to look at cooking times.

Morning all. Yesterday we had roast pork for dinner which was half of a joint that I bought a few weeks ago for pulled pork. I don't usually like pork and find it can dry out easily but this was amazing. The crackling kind of worked too so very happy all round. There's even leftover meat so DH will probably have that in sandwiches today. We also had it with the last of the red cabbage from the freezer so there's a bit more space in there now!
Lunches for the next couple of days are more roasted vegetable cous cous as I made way too much last week and have 2 more portions at least left. Tonight we're having a vegetable dhansak, based off a Jack Monroe recipe and using lentils from the cupboard and extra veg leftover from last week's meals.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20172 -
@ruby_eskimo - we too did a pork dinner last night & have meat left for sandwiches
- I made a real effort to use up vegetables which were languishing - carrots, fennel, celery & a sad red onion. - Also tried to make yorkies from a mix - what a disaster - they were flat, greasy eggy breads but we ate them anyway! Next time its back to making them from scratch or better yet some roasties
Today's reverse planning includes an avocado, roast pork, the rest of the yorkie batter & some bone broth - I'm envisioning crepes with avo & shaved pork with some warm broth on the side for lunch.4 YEARS 10 MONTHS DEBT FREE!!! How would you all cook a lamb neck fillet? I have found a couple of ways but I am always intrigued by all your meals so I thought I would ask you lovely people.

@ajmoney - That's a really nice cut of meat for low & slow or left to marinate & tenderize overnight. If you have the time to spare, a laborious biryani would be my choice. With the paneer cheese as well, this one is not so budget friendly, but very tasty! I'm thinking it could also be made without the paneer?4 YEARS 10 MONTHS DEBT FREE!!! Two choices for me -both delicious.
roast in a hot oven, but you do really need a little fat on it to prevent it becoming dry
Altwrnqtively,Casserole slowly with a good flavoured stock and chopped veg, with sliced potatoes on top as a Lancashire hot pot.4 -
Lamb neck would make a really good irish stew or hotpot.3

Hi all, another freezer delve, using a pack of turkey mince and a pack of beef mince to make meatballs today. Not keen on turkey mince by itself, hence why I'm mixing the 2.
Got steak out for tomorrow nights dinner and we're working our way through the packs of chicken and ham in the freezer for sandwiches.
Need to do another freezer inventory as I didn't manage to update the previous one as things got used up.Grocery Challenge 2024

Having a cheats Korean stew this evening to use up a couple of things, including a couple of fish fillets from the freezer, kimchi from the fridge and a lonely courgette. Will serve with rice on the side.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173

@Mrs_Cheshire - we are the same with turkey mince, always mix it 50/50 with pork mince or seasoned stuffing mince to give a bit more depth of flavour
@ruby_eskimo - that sounds lovely - do you have a recipe ruby? we have all three of those things hanging about at the moment - I think the kimchi is even unopened!4 YEARS 10 MONTHS DEBT FREE!!!
