I came out to my black car yesterday and noticed that my passenger side had been dented at the back with red paint. I also noticed that the red car opposite me has a dent in it with a black mark on. Neither damage had been there beforehand. I have spoken to my neighbour who hasn’t denied that it happened but has only said ‘they would know if they had done it’ and that I can’t prove it. I can’t prove 100% that they did, but I’m confident that it was their fault, any ideas where I stand with this with regards to insurance and cost of repair?

You can't prove anything. It's not even your word against theirs because you didn't witness anything to report.
However confident you may feel that it was them, this isn't going anywhere in terms of getting them to cough up via the insurance or any other way if they're not going to admit it.All shall be well, and all shall be well, and all manner of things shall be well.

Unless your neighbour admits it (if they did it, of course) or you have an independent witness to the collision, you have a choice: claim on your own insurance or get it fixed yourself (and in accordance with your insurance terms, notify your insurer you've done so).0

The only way you could prove it is CCTV or if you can somehow match the black paint on their car to your car. You can pay a lab to do but it's probably not worth it.
Instead I'd suggest investing in a dashcam with parking mode and ideally two lenses, one front and one rear. With wide angle lenses there is a pretty good chance of catching events like this.0
