Re-booked Holidays - Are you covered

I think most insurance companies have stated that you are only covered for Coronavirus related issues, if you took out your insurance before a certain date. However, holiday companies are pushing for you to re-book/re-schedule holidays rather than cancel, which is understandable. So where does this leave you from an insurance perspective? If you change the date of your holiday, have you re-booked your holiday after the date specified by your insurance company and therefore no longer covered?
Any thoughts? I would ask my insurance company, but can't get through at the moment.
