Hotel cancelled non-refundable booking

Hi,
I booked a non-refundable night at a hotel in the UK. They have cancelled it and are refusing to refund me. They've offered credit to rebook a stay within a year.
This was a anniversary so I either want the date or a refund. Do I have any recorse?

Do you know what is meant by non-refundable?
Won't the same time next year be an anniversary too?
